Elverta, CA – In a media release today, Concord-based Tsar Nicoulai Caviar has announced that they have acquired the assets and properties of Elverta-based Sterling Caviar, one of the oldest and largest caviar producers in the United States.
Sterling, facing financial difficulties, was forced into receivership in April after disputes with creditors over $24 million in debt. The acquisition by Tsar Nicoulai will not only expand the company’s reach but also ensure the continued operation of Sterling’s five fish farms located in Elverta, Wilton, Elk Grove, Ione, and Dixon.
“This acquisition allows us to compete on a global scale while reaffirming our commitment to sustainable and innovative aquaculture practices,” said Ali Bolourchi, president of Tsar Nicoulai Caviar.
Founded in the 1980s, Sterling Caviar pioneered sustainable sturgeon farming techniques, utilizing water recirculation systems and environmentally conscious practices. Tsar Nicoulai, established in 1984, also emphasizes sustainable practices and will maintain the respected Sterling Caviar brand.

This acquisition will not only increase caviar production but also expand the market for sturgeon meat.
